Here you will find how we brew and make our favorite coffees

King's Reserve Iced Mocha

Makes one 20 oz drink

Ingredients

  • 1 extra-large round ice sphere or ice cube (large round ice molds are available on Amazon)

  • 15 oz premium chocolate milk (We recommend Darigold Old Fashioned 2% Chocolate Milk.)

  • Two 2 oz espresso shots of NightBreed Naturals King's Reserve Gran Crema, ground very fine

Instructions

  1. Place the large ice sphere into a 20 oz glass.

  2. Fill the glass halfway with the chocolate milk.

  3. Position an espresso chilling ball over the glass (available on Amazon).

  4. Slowly pour both freshly brewed espresso shots over the chilling ball. This rapidly cools the espresso while preserving its rich crema and smooth flavor.

  5. Fill the remainder of the glass with the chocolate milk.

  6. Stir well and enjoy.

For the smoothest, richest flavor, use freshly ground King's Reserve Gran Crema beans and brew the espresso immediately before chilling. use Fiji brand water for brewing.

French Press Brewing Guide

For those who appreciate a rich, full-bodied cup with exceptional depth and smoothness.

  • Grind: Coarse, similar to coarse breadcrumbs.

  • Coffee-to-Water Ratio: 1:15 (30 g coffee to 450 ml water).

  • Water Temperature: 200°F (93°C). NEVER USE BOILING WATER!

  • Brew Time: Allow the coffee to steep for 4-5 minutes.

  • Press: Slowly and evenly press the plunger to separate the grounds.

  • Serve: Enjoy immediately for the fullest flavor and aroma.

NightBreed Tip: Preheat your French press with hot water before brewing, then grind your beans just before brewing to preserve the rich aromas and complex character of King's Reserve Gran Crema. For the smoothest flavor, use freshly ground beans and brew the coffee immediately. use Fiji brand water for brewing.

How We Brew the Perfect Flat White

A properly crafted flat white highlights the rich, velvety character of our coffee blends. The combination of a smooth double espresso and silky microfoam creates a balanced coffee with perfect texture and sweetness.

Equipment

  • Espresso machine with a steam wand (We use the Electactic 20)

  • Stainless steel milk frothing pitcher

  • 8oz Coffee cup

Ingredients

  • Double shot of freshly brewed espresso

  • ½ cup cold whole milk (or your preferred milk)

Brewing Instructions

1. Brew the Espresso
Grind your beans to a very fine espresso grind and make a double shot directly into your 8oz coffee cup.

2. Prepare the Milk
Pour ½ cup of cold milk into a stainless steel frothing pitcher.

3. Steam the Milk
Steam the milk until it reaches approximately 140–150°F (60–65°C), creating a smooth, silky microfoam with a layer about ½–¾ inch thick. The texture should resemble wet paint, creamy and glossy, without large bubbles.

4. Begin the Pour
Tilt your coffee cup slightly and slowly pour a thin stream of steamed milk into the center of the espresso, allowing the milk to blend naturally with the crema.

5. Finish with Microfoam
As the cup becomes about two-thirds full, lower the frothing pitcher closer to the surface and continue pouring to allow the silky microfoam to gently settle on top, creating the signature smooth finish of a traditional flat white.

Serve immediately and enjoy a perfectly balanced flat white with a rich body & velvety texture,
